For fish-

Wring out a wet towel, wrap your fish completely, and place the fully intact fish in a plastic bag and keep it cool. If you are unable to bring the fish in on the day of your catch, carefully place your wrapped fish in the freezer.

For birds/small game-

Leave your bird intact, place it in a plastic bag with the head either under the wing or over the back, remove the air, and seal the bag before carefully putting it in the freezer. If you’re able to bring it in on the day of your hunt, follow the same steps and keep it cool instead of freezing.

For big game-

Keep the cape integrity in mind. Not too high up the brisket. Don’t slit the throat. If you are taking it to a processor let them know you plan to taxidermy your animal.
